Specially, I'm particular about Soba-Tsuyu(soup). So I use special method based on Japanese traditon for more than 50 years . I treat dried bonito flakes by myself, using 2 different types of flakes One is "Katuo-bushi" (tuna) which are caught on the coast of Kochi pref.,Shikoku Island of Japan, and the other is "Saba-bushi"(mackerel) which are caught on the coast of Boso peninsula, Chiba pref. located in Kanto area .
